You need a bamboo matt.
| 4-5 sheets nori | 2 t sugar |
| 2 C uncooked sushi rice | thinly sliced bell peppers or carrots |
| 4 T rice vinegar | wasabi and soy sauce for dipping |
| 1 t salt |
Combine vinegar, salt and sugar. Heat briefly to disolve. Set aside.
Place cooked rice in large bowl and pour vinegar micture on it. Mix with wooden spoon.
For bite-sized rolls, cut nori sheets in half. Place nori on bamboo mat. Spread rice on in a thin layer, leaving a small strip at top edge uncovered.
Place veggie strips in horizontal line. Can place wasabi mixture along veggie line if taking to a pitch-in. Roll. Press firmly with matt to seal. Cut with serated blade.
