Nori Rolls

Adapted from New Recipes from Moosewood Restaurant

These are great appetizers. I love to take them to pitch-ins.

You need a bamboo matt.


4-5 sheets nori 2 t sugar
2 C uncooked sushi rice thinly sliced bell peppers or carrots
4 T rice vinegar wasabi and soy sauce for dipping
1 t salt

Cook rice using slightly more water than normal. Rice must be warm, so don't cook ahead of time!

Combine vinegar, salt and sugar. Heat briefly to disolve. Set aside.

Place cooked rice in large bowl and pour vinegar micture on it. Mix with wooden spoon.

For bite-sized rolls, cut nori sheets in half. Place nori on bamboo mat. Spread rice on in a thin layer, leaving a small strip at top edge uncovered.

Place veggie strips in horizontal line. Can place wasabi mixture along veggie line if taking to a pitch-in. Roll. Press firmly with matt to seal. Cut with serated blade.
